New vs Old Equipment

Often Customers ask me if they should purchase new equipment or used equipment. I always have the same answer for them. New ice machines, freezers and fryers. Always purchase used gas cooking equipment such as griddles, hot plates and char broilers. Refrigerators are okay to buy used but one should get new refrigerators if possible. 

Logic:

Freezers, Ice Machines, & Fryers: (Why New is Better)

Freezers and ice machines are using a compressor that is working hard to get to such low temperatures, that will tend to wear a unit out faster. Ice Machines also have the added element of water. If you know anything about water quality, you'll know that pipes and tubing will get dirty after long usage. Mineral buildup and basically anything in the water will eventually clog tubes, so its better to have a new ice machine. Fryers should be purchased new too, because fryer tanks can crack over time. Just think about heating a pot up to 400 degrees and then letting it cool and then back up to 400 degrees again, day in and day out. Over time the tank will eventually crack.

Gas Cooking Equipment: (Why Used is Better)

First of all if you can afford all new equipment, more power to you. However, that is not everyone's financial situation. Gas equipment is actually very simple. You are welcome to come in to the store and ask us how simple a griddle, range or char boiler really is. After a quick examination you will understand that it is easy to repair broken units. There is nothing worse then having to call service for a complicated ice machine but gas cooking equipment you can just remove the burner and bring it in to us and order a replacement. Overall initial investment will be cheaper and if a repair situation arises we can help you take care of it.

Refrigerators: (Why Used is Okay)

In my experience refrigerators don't have to work as hard to maintain a temperature of 38 degrees. Since the compressor is not working as hard it is less likely to die out on you.

 Disclaimer: We sell both new and used equipment. We strive to sell equipment that is in good working condition and generally warranty all used equipment for 90 days. Every situation is different and there is no way I can foretell how you or your employees will use the equipment, but these are general rules that I would follow if I was to open a restaurant. These rules aren't solid. For example there are situation where you might be able to get a used ice machine for severe discount or a ice machine that was only used for 2 days. So you must evaluate every situation separately and determine what equipment would be suitable for you.
